You are seriously underestimating how important shoes are. The most unrealistic thing about Toph's character is how her feet are still in good shape. If it were anyone else, their feet would be riddled with sharp rocks and diseases.
There are real life peoples on this Earth that do just fine without shoes and survive. Not to mention as an Earth Bender you could sense obstacles and avoid them.
I think you may be overestimating how important shoes are.
Those people you are talking about would absolutely love a pair of shoes. Just because some people in the world can easily survive without a toothbrush doesn't mean you should throw yours away. They may be surviving, but they aren't surviving good.
And even with earth bending, you would have to keep constant attention to where your feet are. If you get distracted for a second, and you step in the wrong place, ouch. Not to mention not all things on the floor are things you can sense. Glass, thorns, metal shards. Earthbenders still wear sandals, only Toph doesn't wear shoes because she is completely helpless with them.
