Eggs, zucchini, red onion, bacon, Swiss cheese, and leftover crispy smashed potatoes - cooked in a little bacon fat.
Sautéed the veg in bacon drippings, then added the bacon, potatoes, and eggs. Topped with the cheese - then popped it in the oven for 15 minutes.
