Trim Wainscoting / Beadboard before or after cabinets? How to trim around the window?

This is not clear enough to answer easily. Except the window just trim it the standard way and it will work. I have no idea what you mean by 2 inch strips but I'm quite sure it doesn't matter.

I should have said 2” casing around the window. I think I’ll extend the cabs closer to the window so there no weird gap between the casing and the cabs.

This is for a new built in’s.

I hate 2" narrow bare wall spots, and design trim to avoid it. Very hard to paint correctly

In this situation you don't use either. Install your kitchen cabinets and everything around it because you're backsplash still has yet to be configured into the situation.

Trim after cabinets are installed. You could remove your old trim and install 1x4s on the sides and a 1x6 on top. Shaker style.

There’s no trim yet this is all new built ins. I’ll extend the casing and cans a bit so that the casing touches touches the cabs.

Yes. That's what I would do. Even put a 1 x 4 on the bottom of the window.
