The cheese platter at my family reunion in Burgundy
Bottom left is a slightly leaking Époisses, the three smaller rounded ones are Picodon (goat cheese) of different ripeness, top right is Langres, center one is Morbier. The one on the right I'm not sure anymore, but I thing it might be a tomme de brebis (sheep milk cheese).

Our cheese plate at home, which we do roughly twice weekly year-round, always has Époisses and Morbier unless the monger is out, in which case we riot. No 100% goat as we're not fans in general. A triple-cream like Brillat Savarin for sure. Okay now I'm hungry.

Morbier is one of my favorite cheeses. I’ll take a plate or two or four of everything!

I bet they were amazing too. I love seeing the breads/crackers people pair with their cheeses because they do influence the experience a lot!

I would (almost) commit murder to get my hands on a raw milk Morbier in Australia. The pasturised one is rubbish! Also love the way you can actually buy cheese at varying degrees of ripeness. So hard to find really ripe cheese here and the way it is stored means unripe cheese usually never develops fully.

I could tell at a glance that bottom left was a ripe Époisses. My favorite cheese in the whole world.

I was wondering why you had so specific cheeses on this platter, thinking that burgundy was a country. I now know that bourgogne is not translated the same everywhere

Nice! Was going to say Reblochon for the right one, but hard to say without seeing the paste. If it was hard or semi-hard it's likely some sort of sheep milk like you suggested.

Hi! I have an Époisses question. We are here in NSG for two weeks and stopped by Berthaut on the way down. I would have loved to see something as melty as yours. But it seemed only ripe near the rind but hard and crumbly in the middle.
Is that how it's supposed to be at time of sale? What should I do to get it to the condition in your photo?

If it's not ripe enough for your taste, keep it a few days in your refrigerator, or even better in a cool cellar. Take it out of the fridge one hour before eating to get it to room temp. Careful Époisses will get runny quite quickly, I promise haha.

Now I want to go back to France. I miss the cheese and the produce the most.
I know it sounds weird to say that last one, but the fruits and veggies all look unreal and absolutely delicious in every market display. Those displays are a work of art in themselves.

Love the way we serve cheese out of a fridge. The French let it climb onto the plate on its own, and it tastes ten times better.
