Ideas for a lot of feta?
I have been making Greek salad almost every night for weeks, as fresh tomatoes and cucumbers come in from my wife's garden. Last night, the family finally said "enough," even though I could eat this salad daily forever. So, while we've pretty much run through the tomatoes anyway, I have about 3/4 lb. of feta in brine in the fridge. I think all I have ever used this cheese for is the aforementioned salad and on pizza. Any ideas?

I didn’t love this. The feta was off-balance and kind of grainy. I think it’s good for a simple, low effort dish, but I feel like people who cook a lot can make much better sauces with only a bit more effort.

Same, I also found it was somewhat under-seasoned or missing something I just couldn't quite put my finger on what it was, its alright, but I made it and was just like...oh. I would have much rather just made a nice fresh tomato & pasta dish with crumbled feta on it honestly I felt like it was a waste of feta, but obviously people love it.

I love this so much. I have to space out how often I make it so that we don't get sick of it, hah. I love it with thin spaghetti, and I also add shallots to it.

I put feta in the middle of a roasting pan and surround it with cut up vegs- zucchini, tomatoes, onions, whole garlic cloves, even thinly sliced lemon, olives, whatever is on hand. Drizzle w olive oil & seasoning and stick in the oven until it’s done enough.

Lot of good ideas already. We like to make a dipping sauce with sour cream, mayo, fresh dill, salt, pepper, lemon juice, and a ton of crumbled feta. Sometimes we add some fresh oregano and / or chopped green olives too. Basically it’s used with crispy chicken wings.
We also love it over fried eggs and drizzled with olive oil.

Feta and spinach filo pastry parcels. Make a batch and freeze maybe? I’ve never frozen filo pastry stuff after making it, it’s normally eaten pronto but that might work.

Do you use the canned pumpkin? I was wondering whether sweet potato would give a similar texture but allow me to cut down on the honey.

Yes I used canned pumpkin, I don't like sweet potato so I can't imagine that would taste very good.
I imagine cutting down honey and swapping potato's would result in a mashed potato like dish. Which could be great but not as a spread

if you dont have leeks, you can use onions, just cook them until soft and translucent. You can also add some frozen spinach pretty easily.

I change up my “Greek salad” & make Greek orzo, Greek tortellini, Greek couscous, & Greek quinoa salads.
I use feta, garden tomatoes & fresh basil in tik tok pasta.
I use crumbled feta instead of cotija cheese on tacos & Mexican street corn.

You could do mint, watermelon, feta salad (other ingredient = olive oil, salt/pepper, lemon juice + zest, optional arugula and slivered almonds).
Otherwise that viral oven - feta/tomatoes/basil/ olive oil oven tomatoe sauce.

One of my favorite things in the world is pasta tossed with chopped steamed broccoli/olive oil/minced garlic/crushed red peppers/Kalamata olives/and a good amount of feta cheese. Everything is hot and you toss it with the cheese and it gives you these little creamy bits of feta in the pasta, and it is absolutely delicious.

Greek yogurt, lots of feta, lemon juice, grated garlic, lots of black pepper. My favorite dipping sauce. And you can thin it out with water for a tasty salad dressing.

I like to gather kalamata, green and black olives, marinated dried tomatoes, salami, oven baked bellpeppers, garlic, capres, and feta all together with herbs and marinate with olive oil.

I like to make a quinoa salad. Quinoa, finely diced red onion, chopped parsley, crumbled feta, finely diced green onion, diced tomato. Toss it all together with a vinaigrette or even just some lemon juice on top. It's really good.
You can also make spanakopita it's kind of a pain in the ass to work with the phyllo dough, but it's so yummy.
I'm not a big fan of that viral feta pasta, but you could try that. Just bake the feta with a bunch of tomatoes or red peppers or really whatever veggie you want and blend it all together into a pasta sauce.

I eat shakshuka with feta or goat cheese at least once a week. Some of my favorite recipes from the NY Times website: sheet pan baked feta with broccolini is so simple and delicious, and the baked farro with lentils, tomato and feta is one of my go to comfort dishes. And their chicken zucchini meatballs with lemony feta sauce is amazing. I'm jealous of your abundance of feta!

Mediterranean frittata (or quiche) is one of my faves! Feta, roasted cherry tomatoes, spinach, and Kalamata olives. I cut the feta in small cubes and also crumble a bit into the egg mixture.

Anything you regularly like to use cheese, you can use feta.
Omelets, egg or tofu scrambles, cooked grains, noodles, rice mixes, quinoa. Steak topping, vegetable stir fry. A mixed cheese, grilled cheese sandwich. Baked potato topping.
You can blend feta into any number of sauces. You're only limited by personal tastes.

Feta spread, or fried feta (saganaki style), tart with spinach and feta, these are the things that come to my head instantly. Also, once I had a salad with feta and watermelon, it was quite funky.

Theres the TikTok pasta thing where you put cherry tomatoes in an oven dish with a block of feta, drizzle oil and any herbs you want then bake it until the feta melts. I think you blend it then pour over pasta. My mum also does a great dish where you put feta in tinfoil with some herbs (maybe a drizzle of oil) and bake it then stir it through warm peas. It’s great with crusty bread or as bruschetta.

My favorite way to use feta, other than xoriatiki, is to crumble and mix it with sun-dried tomatoes and kalamata olives as a topping for baked chicken.

Whipped feta (half feta, half greek yoghurt or sour cream), lightly toast some garlic and red peer flakes in olive oil, drizzle over the feta mix, top with homemade hot honey. Dip up with naan bread or veggie strips. Yum!

Make a pie with spinach, sun-dried tomatoes, the feta (crumbled), cooked ground lamb, egg, dill, and cottage cheese. Mix it all together and put into a store bought crust, top with the second crust, and bake at 350 for 45 minutes or until crust is nicely brown. Delicious!

Spinach pie/spanikopita! One of my favorite things to eat—also tiropita. I make a dish that is the closest I could come to a Greek dish I loved at a restaurant years ago—called (there) Shrimp Skorpios: Onions, garlic, tomatoes (I like cherry tomatoes), capers, thinly sliced lemon pieces, shrimp, and feta cheese cubes. I put everything except the feta and shrimp in to roast awhile first, then add them in after it’s roasted awhile (around 400). Forgot the oregano—sprinkle that over the veg.
Lots of yummy Greek dishes use feta!

You can make spinach pie, like a Greek spinach and feta version with filo dough. Or you can do more of a pie version with spinach and feta. You can even make spinach and feta empanada as if that's more your style. Or use the feta in a frittata with whatever vegetables you like. Spinach would work there too but it doesn't have to be spinach.

I love feta so much omg. One thing that uses a lot is a pasta that I make with caramelized onions, walnuts, feta, lemon, and arugula with rigatoni.
Very rough recipe (adjust as you want, or add/swap ingredients!)
