Ideas for a lot of feta?

I have been making Greek salad almost every night for weeks, as fresh tomatoes and cucumbers come in from my wife's garden. Last night, the family finally said "enough," even though I could eat this salad daily forever. So, while we've pretty much run through the tomatoes anyway, I have about 3/4 lb. of feta in brine in the fridge. I think all I have ever used this cheese for is the aforementioned salad and on pizza. Any ideas?

I love feta so much omg. One thing that uses a lot is a pasta that I make with caramelized onions, walnuts, feta, lemon, and arugula with rigatoni.

Very rough recipe (adjust as you want, or add/swap ingredients!)

  • Quarter and slice a white onion, cook down until golden, sticky and caramelized.
  • while that’s cooking, boil some rigatoni(the giant hollow tubes are so great for the ingredients to get inside).
  • add some fresh thyme and a splash of balsamic vinegar.
  • once the onions are done, cube or crumble a bunch of feta (don’t be stingy, some will melt and help create a sauce).
  • add a few handfuls of chopped walnuts (toast them first too if you like).
  • then add a few handfuls of arugula and cook it down.
  • once the pasta is cooked, add a couple ladles of pasta water to help the sauce come together. Add salt/pepper, and a squeeze of lemon for some acid.

Google TikTok pasta. It's a baked feta-fresh tomato-garlic situation tossed with pasta. It's incredible.

20

u/jennerator88 20h ago

The Smitten Kitchen version replaces pasta with chickpeas and it's also delish.

u/Lys_456 16h ago

I didn’t love this. The feta was off-balance and kind of grainy. I think it’s good for a simple, low effort dish, but I feel like people who cook a lot can make much better sauces with only a bit more effort.

u/Glum-Vegetable7554 1h ago

Same, I also found it was somewhat under-seasoned or missing something I just couldn't quite put my finger on what it was, its alright, but I made it and was just like...oh. I would have much rather just made a nice fresh tomato & pasta dish with crumbled feta on it honestly I felt like it was a waste of feta, but obviously people love it.

u/darktrain 20h ago

I love this so much. I have to space out how often I make it so that we don't get sick of it, hah. I love it with thin spaghetti, and I also add shallots to it.

Watermelon and feta salad.

I put feta in the middle of a roasting pan and surround it with cut up vegs- zucchini, tomatoes, onions, whole garlic cloves, even thinly sliced lemon, olives, whatever is on hand. Drizzle w olive oil & seasoning and stick in the oven until it’s done enough.

2

u/BorisLeLapin33 9h ago

I can't believe I had to scroll this far to see the baked feta option!

4

u/carbon_made 20h ago

Lot of good ideas already. We like to make a dipping sauce with sour cream, mayo, fresh dill, salt, pepper, lemon juice, and a ton of crumbled feta. Sometimes we add some fresh oregano and / or chopped green olives too. Basically it’s used with crispy chicken wings.

We also love it over fried eggs and drizzled with olive oil.

Feta and spinach filo pastry parcels. Make a batch and freeze maybe? I’ve never frozen filo pastry stuff after making it, it’s normally eaten pronto but that might work.

Spinach feta gnocchi. Or make butternut squash feta pasta sauce and freeze.

I made a pumpkin feta whipped concoction with honey and pecans and oh my GOD

1

u/jr0061006 20h ago

Ok you KNOW we need the details! What kind of pumpkin?

2

u/Venaalex 20h ago

1

u/jr0061006 33m ago

Do you use the canned pumpkin? I was wondering whether sweet potato would give a similar texture but allow me to cut down on the honey.

1

u/Venaalex 31m ago

Yes I used canned pumpkin, I don't like sweet potato so I can't imagine that would taste very good.

I imagine cutting down honey and swapping potato's would result in a mashed potato like dish. Which could be great but not as a spread

5

u/skeevy-stevie 20h ago

Stuffed banana peppers. Feta works great mixed with mozz or whatever else cheese you have.

I like to use it in sheet pan chicken with roast vegetables and Greek style marinade.

u/QueenZod 7h ago

Feta is also fabulous in scrambled eggs with lots of pepper.

leek and feta borek https://theflexitarian.co.uk/recipe-items/leek-feta-borek-pie-vegetarian/

if you dont have leeks, you can use onions, just cook them until soft and translucent. You can also add some frozen spinach pretty easily.

2

u/gretabareta 20h ago

I change up my “Greek salad” & make Greek orzo, Greek tortellini, Greek couscous, & Greek quinoa salads. I use feta, garden tomatoes & fresh basil in tik tok pasta.
I use crumbled feta instead of cotija cheese on tacos & Mexican street corn.

1

u/youngboomergal 20h ago

I found a recipe for feta and zucchini muffins that I'm planing to make

u/DonFrio 20h ago

Roast in the oven with other veggies (more tomatoes!) and throw in a blender to make a sauce you can freeze

Spanikopita &/or tyropita

Feta & black bean quesadillas

Green bean feta salad

1

u/JulieThinx 20h ago

It makes an awesome cheese sauce for pasta

1

u/swgoodsoup 20h ago

You could do mint, watermelon, feta salad (other ingredient = olive oil, salt/pepper, lemon juice + zest, optional arugula and slivered almonds).

Otherwise that viral oven - feta/tomatoes/basil/ olive oil oven tomatoe sauce.

1

u/eodenweller 20h ago

Lentils, rice, feta, fresh tomatoes. It’s been my lunch at least 5 times in the past week.

1

u/Past_Cranberry_9989 20h ago

One of my favorite things in the world is pasta tossed with chopped steamed broccoli/olive oil/minced garlic/crushed red peppers/Kalamata olives/and a good amount of feta cheese. Everything is hot and you toss it with the cheese and it gives you these little creamy bits of feta in the pasta, and it is absolutely delicious.

u/Jxb1000 20h ago

My family loves feta honey dip.

1

u/badlilbadlandabad 20h ago

Greek yogurt, lots of feta, lemon juice, grated garlic, lots of black pepper. My favorite dipping sauce. And you can thin it out with water for a tasty salad dressing.

u/Evening_Mango414 20h ago

Greek pasta salad is delicious!

Ellie Kreiger has a recipe for feta and red pepper pasta sauce that is really good.

1

u/everyday_em 20h ago

Bake it with cherry tomatoes, thyme, and oregano and serve it over rice or bread!!

1

u/Valuable-Yard-4154 20h ago

I like to gather kalamata, green and black olives, marinated dried tomatoes, salami, oven baked bellpeppers, garlic, capres, and feta all together with herbs and marinate with olive oil.

1

u/Acceptable-Sector322 20h ago

I like to make a quinoa salad. Quinoa, finely diced red onion, chopped parsley, crumbled feta, finely diced green onion, diced tomato. Toss it all together with a vinaigrette or even just some lemon juice on top. It's really good.

You can also make spanakopita it's kind of a pain in the ass to work with the phyllo dough, but it's so yummy.

I'm not a big fan of that viral feta pasta, but you could try that. Just bake the feta with a bunch of tomatoes or red peppers or really whatever veggie you want and blend it all together into a pasta sauce.

1

u/Militia_Kitty13 20h ago

Egg bites- eggs, veggies (I do spinach, bell pepper, tomatoes, and zucchini), ham or bacon and feta. So good!

1

u/orangefreshy 16h ago

Marinate it?

Whip it up and top with some pot beans and charred cabbage and herb pistou

Freeze it and grate over some compressed watermelon

u/SaturniinaeActias 16h ago

I eat shakshuka with feta or goat cheese at least once a week. Some of my favorite recipes from the NY Times website: sheet pan baked feta with broccolini is so simple and delicious, and the baked farro with lentils, tomato and feta is one of my go to comfort dishes. And their chicken zucchini meatballs with lemony feta sauce is amazing. I'm jealous of your abundance of feta!

1

u/freeespirit 16h ago

Mediterranean frittata (or quiche) is one of my faves! Feta, roasted cherry tomatoes, spinach, and Kalamata olives. I cut the feta in small cubes and also crumble a bit into the egg mixture.

1

u/Pops_88 15h ago

Feta and broccoli are a great combo for quiche!

1

u/VioletGale 15h ago

I like it mixed with sausage in stuffed mushrooms.

1

u/BlkBear1 15h ago

Anything you regularly like to use cheese, you can use feta.

Omelets, egg or tofu scrambles, cooked grains, noodles, rice mixes, quinoa. Steak topping, vegetable stir fry. A mixed cheese, grilled cheese sandwich. Baked potato topping.

You can blend feta into any number of sauces. You're only limited by personal tastes.

1

u/Shinizzle6277 14h ago

Feta spread, or fried feta (saganaki style), tart with spinach and feta, these are the things that come to my head instantly. Also, once I had a salad with feta and watermelon, it was quite funky.

1

u/FoolishDancer 13h ago

We freeze extra feta.

1

u/Youngfolk21 12h ago

Feta in pastry with vegetables. Feta pasta. I place it on top of eggs.

1

u/luala 11h ago

Theres the TikTok pasta thing where you put cherry tomatoes in an oven dish with a block of feta, drizzle oil and any herbs you want then bake it until the feta melts. I think you blend it then pour over pasta. My mum also does a great dish where you put feta in tinfoil with some herbs (maybe a drizzle of oil) and bake it then stir it through warm peas. It’s great with crusty bread or as bruschetta.

u/Sporkalork 10h ago

Watermelon salad - Cubed watermelon, blueberries, diced red onion and lots of crumbled feta on baby spinach. Make the dressing of equal parts honey and lime juice, whisked

Gozleme! A fantastic, simple meal we have regularly. I cut mine in half and cook them n a small sandwich press, too easy! Recipe here: Silver beet and Fetta Gozleme

u/mochichan14 9h ago

You can do a lot of stuff with feta in the turkish cuisine. I would recommend doing börek or pogaca 👍🏻

1

u/DonutHoleTechnician 8h ago

My favorite way to use feta, other than xoriatiki, is to crumble and mix it with sun-dried tomatoes and kalamata olives as a topping for baked chicken.

1

u/ruinsofsilver 8h ago

there is so much that you can do with feta cheese!

  • tirokafteri is a spicy greek dip or spread made with feta and roasted hot peppers
  • spanakopita is a savoury pie made with spinach, feta and a phyllo dough
  • the viral tiktok baked feta pasta is a super easy yet delicious dish

1

u/Ladolfina 7h ago edited 2h ago

Whipped feta (half feta, half greek yoghurt or sour cream), lightly toast some garlic and red peer flakes in olive oil, drizzle over the feta mix, top with homemade hot honey. Dip up with naan bread or veggie strips. Yum!

1

u/TheThrivingest 7h ago

Mesclun salad, with roasted beets and red onions, feta and dill. Any kind of vinaigrette works.

Maroulosalata is my go to for a quick salad and everyone loves it in my house

1

u/QueenZod 7h ago

Make a pie with spinach, sun-dried tomatoes, the feta (crumbled), cooked ground lamb, egg, dill, and cottage cheese. Mix it all together and put into a store bought crust, top with the second crust, and bake at 350 for 45 minutes or until crust is nicely brown. Delicious!

1

u/WhiteExtraSharp 7h ago

I put a lot of feta on shakshuka. I sometimes use it on a spinach-berry salad.

1

u/penguinpudding03 6h ago

cooked beets (you can find them at many grocery stores they are plastic wrapped!), feta, pumpkin seeds, and craisins on top of spring mix and cress if ya like it! balsamic dressing. S O good. i am addicted to this lil salad

1

u/SM1955 5h ago

Spinach pie/spanikopita! One of my favorite things to eat—also tiropita. I make a dish that is the closest I could come to a Greek dish I loved at a restaurant years ago—called (there) Shrimp Skorpios: Onions, garlic, tomatoes (I like cherry tomatoes), capers, thinly sliced lemon pieces, shrimp, and feta cheese cubes. I put everything except the feta and shrimp in to roast awhile first, then add them in after it’s roasted awhile (around 400). Forgot the oregano—sprinkle that over the veg.

Lots of yummy Greek dishes use feta!

1

u/KindCurrency352 3h ago

Cous cous bowls!!! Basically salad but with a cous cous base. Make a tahini dressing and throw some veggies and a protein on top. Then the feta

1

u/Haypiggy 1h ago

Roasted vegetable and feta tarts are amazing with some spiced tomato chutney!! A good way to use up a few of your current ingredients.

1

u/Successful_Sail1086 1h ago

I use feta for this Kale and Quinoa Salad and it is one of my very favorite things to eat.

You can also whip feta with Greek yogurt for a dip

1

u/thread_cautiously 20h ago

Maybe get some ready rolled puff pastry and make spinach and feta turnovers/pasties?

1

u/Inside-Beyond-4672 20h ago

You can make spinach pie, like a Greek spinach and feta version with filo dough. Or you can do more of a pie version with spinach and feta. You can even make spinach and feta empanada as if that's more your style. Or use the feta in a frittata with whatever vegetables you like. Spinach would work there too but it doesn't have to be spinach.
