Ideas for a lot of feta?

I have been making Greek salad almost every night for weeks, as fresh tomatoes and cucumbers come in from my wife's garden. Last night, the family finally said "enough," even though I could eat this salad daily forever. So, while we've pretty much run through the tomatoes anyway, I have about 3/4 lb. of feta in brine in the fridge. I think all I have ever used this cheese for is the aforementioned salad and on pizza. Any ideas?

I made a pumpkin feta whipped concoction with honey and pecans and oh my GOD

Do you use the canned pumpkin? I was wondering whether sweet potato would give a similar texture but allow me to cut down on the honey.

Yes I used canned pumpkin, I don't like sweet potato so I can't imagine that would taste very good.

I imagine cutting down honey and swapping potato's would result in a mashed potato like dish. Which could be great but not as a spread

Right. Well, this one is going on the must-try list! I’ll have to get a can of pumpkin next time I’m shopping.
