I prefer Dabi vs Azula, even if it is kind of a rehash of Zuko vs Todoroki. Although I think Dabi vs Azula is cooler

Dabi vs Winter is a really cool hero vs villain matchup! It's built more on contrasts than connections, with them both being the elder children of wealthy, powerful families in their respective worlds, raised on the crushing weight of expectations. But while Dabi eventually snapped and became an anarchist terrorist, Winter closed herself off and supported an authoritarian regime. The pairing drips with drama and conflict, plus the fire vs ice theming is really fun.

Vanica vs Boros was one I made on a whim when I first joined the community. It's focused around the idea of them both being blood-lusted warriors looking for worthy opponents, and I think that Vanica and Boros' differences in personality would make for more interesting interactions than, say, Boros vs Battle Beast.
