Budget Meal Yummy Roasted Red Pepper Hummus with Pickled Garlic 🧄

A delicious recipe I made using up some open chickpeas and a jar of roasted red pepper that had been sitting in my pantry for months. I often pickle anything I can get my hands on so in this one I added some pickled garlic. Recipe below on comments.

Roasted Red Pepper &Pickled Garlic Hummus ✨Hummus de Pimiento Rojo Asado y Ajo Encurtido✨

Smoky, tangy, and ultra creamy – this hummus is packed with bold flavor and made with simple plant-based ingredients. Perfect as a dip, spread, or a spoonful straight from the bowl 😋

🔸A jar of cooked chickpeas 🔸2-3 Roasted peppers 🔸3 pickled garlic cloves 🔸150 ml aquafaba 🔸50 ml vegetable milk 🔸Juice of 1/2 lemon 🔸3 tbsp toasted tahini 🔸1 tsp ground cumin 🔸 1/2 tsp. Salt 🔸1 / 2 tsp. ground black pepper 🔸alfalfa, arugula leaves and alcaparras to decorate the hummus.

⏩Drain chickpeas and garlic, add all the ingredients to a blender or use a hand blender which is what I did (beware it splashes) and blend until smooth. Transfer to a dish and decorate.

Tell me more about this pickled garlic, do you just toss garlic cloves in vinegar?

Yes the colour is amazing. Yes I boil 50 ,water, 50 apple cider vinegar and a teaspoon of salt approx pop in jars add a few fresh herbs and even pop them straight in the fridge or either boil them on water.
