I always thought portioning dressings was silly since the gallon jugs have a pump option to buy. Why fill up 50 portion cups when a guy can just pump the cup with the dressing at expo? It cleared up tons of room on the line for us.

I just says portion ranch. I would interpret this as put ranch in squeeze bottles for line. Who's putting ranch dressing in portion cups?

Ranch, French, 1000 island, blue cheese, Italian, south west, etc, we had a kitchen manager that wanted 50 of each in bus tubs on the line under the station. It all goes out the same for everything you get that requires them. Do you not put dressings in portion cups?

Just to order from a squeeze bottle like you said. Pre loading into portion cups seems unnecessary, unless it's piping butter or something...

We would easily hit 2200 on the weekends (per dinner), having a line cook stop to fill a 2 oz portion cup begins to get tedious
