questions What is the filling in these Doo Top Ddok?
Doo Top Ddok is what’s on the label. I assume Doo Top is a brand name. The internet tells me that ddok (aka tteok) can refer to a sweet Korean rice cake. It’s a nice soft sweet chewy rice dough like an ice cream moochi. It’s been rolled in a tan powdered topping which I’ve now learned is likely to be roasted soy bean powder. Inside there is a soft sweet pale peach/pink colored creamy filling with something slightly crunchy like maybe nuts? I’ve had red bean filling before but this is more creamy plus there are nuts but no red bean skin. Some of the rolls are tan, some are green and some are reddish brown but the filling is the same for all.
Any idea what is the delicious creamy filling is made of? And what kind of nuts might have been used?
There is no ingredient list on the label. Just the name Doo Top Ddok and a made in date and price.

Doo top isn’t a brand name (although very poorly romanized lol) it’s a type of tteok (두텁떡; means it’s thick) made with sticky rice and stuffed with various fillings, and covered with powdered red bean.
Commonly used fillings are bean paste, pine nut, chestnut, jujube, cinnamon etc so I would say that white cream is a bean paste

Also tteok doesn’t need to be sweet. Tteok itself doesn’t contain any sugar and all the sweetness comes from fillings

I’ve had the solid tube shape with a sweet and spicy sauce. I like the texture.

That dish is called ddeokbokki, if you're looking to order it again or make it at home.

This is very helpful. “doo top” didn’t translate to anything related to rice cakes when I searched so I figured it must be a brand name especially because it has the word “top” in it.
Powdered red bean! White bean paste and nuts. Delicious combo. I mean it was a wow!

Not sure, but I wonder if they used black eyes peas (동부콩), it looks a bit whiter than mung bean

I never imagined any kind of bean in the filling. It’s just perfect whatever it is.

It’s a white variant of bean paste, or 앙금 in Korean. The red version is red bean paste, or 팥앙금

White bean paste is usually also made of red bean too, but the peeled one. Or maybe it's mungbean paste.

It’s amazing to me because I would have guessed it was a cream from dairy similar to ricotta cheese. Beans make way more sense but I never know they could be so creamy.

This looks like maybe mugwort tteok that's been filled with a sweet white mungbean bean paste and chopped nuts (maybe walnuts?). The coating is castella cake crumbs.
