Sorrel

Hi all, I balanced my farmer’s market sorrel to extract the oxalic acid and it all turned brown! Any idea why? Perhaps that’s what caused it to turn brown? I had heard that it has a lot of it and that accounts for the sour taste. Maybe it would have been better to just eat it raw.

Yeah, it turns brown on blanching. I've seen recipes recommend you mix it with spinach since they stay green if you plan to cook it. Personally I just love it raw in salads or as part of a sandwich. Or just eating the leaves as a tasty snack by themselves.

Love it! So sad I wasted a whole bunch! Next time I’ll mix in a salad or sandwich
