I don't have any info on the University, but I lived in Radom for 6 months. I like the Hala Targowa market, my roommate liked to party at The Ministry, Baba Yaga is a cool restaurant to check out outside of town which you'll need a local car for, and I really liked the folk instrument museum in Szydlowiec. Enjoy your time there. PS: Not for everyone but I went everywhere in the region by thumb. Hitchhiking is well accepted in Poland.
