Pregonta Su Filindeu

Hi everyone, I’m a professional chef and I’ve always been fascinated by su filindeu. I’d love to learn how to make this traditional pasta the proper way, and I was wondering if anyone in Sardinia is still teaching or sharing this incredible knowledge.

If you know of someone (or a family) who passes on the technique, I’d be very grateful for any information.
