'City of Echoes' by Judy Lin. It begins shortly before Aang arrives in Ba Sing Se and ends shortly after the liberation.
Smellerbee and Longshot also play prominent roles, but it's the first Avatar anything as far as I know where the Avatar themself is mentioned-only and exists only in the background.

Grassfire is really good, and the writer updates enough that it might actually finish.
An Unknown Variable An alive Lu-Ten is the MC, but Jin and Zuko feature prominently.
A Distant City is cool but hasn't updated in over a year.

What’s that? Is it when a prince pretends to be a commoner and falls for a commoner girl who doesn’t know he’s the prince. He also reveals he’s a prince but she doesn’t believe him at first until some part of the story reveals he really is like his assistant or something? Then they get married and have a fairy tale wedding.

Yeah, something like that. Standard Commoner/Royal romance.
I once outlined some fanfic concepts for it. Including Azula trying to help mentor Jin for the 'Fire Lady' role or at least hanging around her because Jin's one of the few people around Azula doesn't have massive personal baggage with.

Oh that does sound interesting but I don’t think Azula and Jin would get along well. Jin is too nice and probably wouldn’t fall for Azula’s tricks.

Yeah, I've pondered what a feasible dynamic for them could be, other than "There's just something about Jin that Fire Nation royals like."
Personality wise, Jin is Ty-Lee adjacent, so that might help. But overall it was just pondering a 'Jin Fire Lady' story and what characters would be involved.
Other pondering stories were things like "What if Jin really was a Dai Li spy?"

Yeah, I see what you mean—it was just flirting, and maybe I overreacted. But for me, it wasn’t about controlling Mai or assuming anything about her feelings. I just don’t like seeing people tested like that. I am not a perfect boyfriend

honestly it's completely ambiguous, all we see is like a 2 seconds scene with no audio where mai is looking generally at his direction while his talking, i am fine with any theory people have, but it's not obvious shes doing anything wrong

I get why you feel that way about Ember Island, but I actually like Mai because her love for Zuko was real and unwavering. Even when Zuko went against the Fire Nation and her and ignoring her . she didn’t abandon him in the Boiling Rock, she literally risked everything, going against everyone, even Azula, just to save him. She wasn’t flashy or over the top, but her loyalty and courage showed how deeply she cared. Ember Island was a messy moment, sure, but it was just one night her love for him was steady, quiet, and proved in the hardest moments, not just the fun ones. That’s why I think Zuko deserved Mai (yeah but in comics its concerning)

The girl with the burn up her leg. Her family helped Iroh after he drank tea made from a poisonous plant. She seemed to understand Zuko's anger in a way that most other people didn't. I liked how her gentle optimism balanced out his personality and cynical mindset.

In all honesty I think Zuko is also shippable with a lot of water tribe and fire nation. I reckon he could fall in love with most people that are either good at caring for him, which the abused child in him needs, or good at leading alongside him, which the overworked adult fire lord in him needs. Suki is imo special as being able to do both (Katara too, but I don't wanna start a shipping war under a wholesome Jin thread)

I'm gonna die on this hill, but this ship was much better than Mai X Zuko and the only reason we needed Mai X Zuko to be a thing is for Mai to have a reason to betray Azula

Hah, my "die on this hill" moment/spicy take is that the "You miscalculated" line wasn't earned.
Mai/Zuko always felt like the 'safe/expected' option for both of them.
And when I originally watched the show I thought Mai was actually going to give up the noble life she allegedly hated and like, go join June as a bounty hunter apprentice or something.
