I fucking despised the idea of doing cardgames while I have an urgent mission, but everyone loved it so I sat down to figure it out in skellige, long story short I harassed every npc with my foltest siege deck.
I kinda like the idea of gwent, if you don't care you won't miss much extra content, but if you enjoy it it's a nice little extra.

It's an unfortunate paradox that's not super easily solved; in order to get good cards (not just another copy of poor man's fucking infantry or another copy of blizzard) you need to win matches against people with good decks (mainly innkeepers, but just about every merchant, blacksmith/armorer, and herbalist will play you, they just give one of a random pool of mid-tier cards if you win though), but in order to win, you need good cards lol
Tbh if you just stick with northern realms, you can sweep the game pretty easily. It has the best spies of any faction, and can easily break 100pts/hand by the time you hit skellige (though you'll wanna go to skellige ASAP and get the 2nd best northern realms spy, a 1pt siege spy sold/won from an innkeep early on in the skellige gwent quest line)
Against these factions, you'll wanna stick with these strategies:
Northern Realms / Nilfgaardian Empire: take 2-3 decoys (they WILL have spies so just throw em right back at em), play a single high card (an 8 siege) and try to keep that as the highest rated card on your field for as long as possible, as both have (but more frequent in Nilf) one scorch in the deck
Scoai'tael: take one decoy if you have the card that can revive a card from the graveyard or if you have any spies, because they will bring one decoy as well, and they have 2 scorch cards in the deck, so plan around that and try to fake the AI out with high card / combos that you dont actually want to end with on the board (the twin siege 8 combo works great for drawing them into using a scorch as they double up to 16 and the AI can't resist scorching them)
Monsters: no decoys, they don't usually have any scorches, but you'll wanna take two scorches because they have series combo cards
Skellige (DLC): whatever you want, it's a terrible faction lol good luck on the tourney quest line and remember that revive cards are useless as the faction leaders power is to wash away the graveyard, but they don't have scorch nor do they have any spies or decoys, so seriously, pretty much do whatever
At first, you'll want to have at least one blizzard, rain, and fog card in your deck, as you can kill a lot of those combos with that, but as you get better cards, it becomes less and less relevant as you can just out-score them anyway. Always bring 2 horns.
Oh, and use the 2nd leader once you get him. Free "clear weather" once per game, it'll save your butt all the time. In the game options, there's a separate difficulty modifier for gwent. Switch it to easy for your first couple of games until you get a comfortable deck

This is the problem with so many RPGs. They make a world full of fun people and things to do and then give you a time sensitive really important main quest to do. Its hard to justify all the fucking around.
Morrowind did it the best. Hello, you may be the chosen one but you are weak and useless. Go and do things and come back when you feel stronger and we will see if you actually are the guy to fulfil the prophecy.

Herbs, booze, repairs, food, inns, travel costs, bribes, and a thousand-pound walking stomach named Roach, the man’s going to be out chasing every contract he can find and fleecing every sucker with a deck of cards.
And let’s be honest, Geralt bedding half the continent isn’t just about romance, he’s saving coin on lodging. Very resourceful.

I'm not much of a Gwent player (yet). It's find Ciri, kill Wild Hunt and bang all the hot women in the game for me

Geralt: "yearning to play a few rounds of gwent. That oughta set me straight"
Random person: * nods silently *

Talk to the Baron, accept the quest to search for his family, then go do random quests until I run out of them.

Didn't know there is a Chad potion in the Witcher universe. The more you know.
