Can't find endive, sub with baby bok choy?

I am headed to a party in a couple of hours. I planned to bring endive boats with apples, walnuts, blue cheese and balsamic reduction drizzle. Problem is when I stopped by the store to get the endive they are out of stock. I grabbed a bunch of baby bok choy thinking it might possibly work. Is this gonna work or will I totally regret it?

To me, that’s not a close comparison because endive is so delicate and bok choy is a thick cronch. What about using a sliced apple as the vessel and top it with the rest of the items? Or, you could add all of it to the top of a cracker

A closer alternative would be chicory. Or even just wild rocket (aka aragula). Endive is bitter so you’d need something with a similar flavour profile. Bok choy is more grassy / bordering on sweet and also quite watery. 💚🩶🤍
