Experiment, not sure what to call them

Mashed potato, pepper jack cheese, cheddar cheese, green onion, garlic, paprika, breaded and fried.

Croquettes. Did you use instant mash? For something like this, they work great!

Nope, I didn't even think of that, to be honest. Just had a couple pounds of yellow potatoes in the pantry.

Fresh potato is usually better. But only by a small margin in croquettes. Using yellow potato is a good move which I think brings it up.

The instant mash is great for a quick appetizer or side, as well as flavor/texture/technique testing.

Honestly I might use the instant potato as a binder/thickener. I used potato starch cause I had some left from wings. But the filling was a little too moist so hard to work with

How'd they taste? Any dipping sauce? I feel like some diced jalapeños would work in those.

I'm thinking the next run, maybe some bacon, diced jalapeños could be damn good, too.

They were great, super filling. Less of an appetizer and more of a lunch lol. Hard some leftover ranch dip from last night's wings eith them
