I know this'll be unpopular but I don't like Cabo Bob's chips
They are really greasy and I am not a big fan of the thick cut. Everything else is great but their chips aren't good.

Massively disagree
I love that they make their own chips and love that they are thicker to hold up to queso and guacamole. They also make awesome nachos

I love that they're super thick and sturdy, makes it to where even the last couple nachos are still firm and crispy! It wouldn't be my first choice for just a chips and salsa snack, but they are absolutely S-tier for nachos, especially the Cabo Bob's loads up their nachos

I was about to agree with OP but honestly I think you hit the nail on the head. You need those chips to hold the line while you climb that mountain

Those are real tortilla chips. I feel like the super thin ones are manufactured mass produced food.

Ive seen them but haven't tried them. I've been getting Caso de Oro which is similar to real tortilla chips.

They look like a standard light airy thin crispy chip. I'll give him a shot next time though, but they look like what you would get at Chuy's.

Well, you’re going to be delighted to be wrong about that. They are the lightest most delightful tortilla chip I’ve ever had. Almost like a wonton. It’s one of the only things that sub agrees about.

I'll give it a shot if you think that they're really that good. I like thick chicks. In fact, I usually fry my own from HEB yellow corn. You just can't beat a freshly fried chip like that. I usually do that when the chip is the main part of the meal.

Sounds like you’ve got your mind made up about your chip preference but as far as a lighter chip, these are exceptional and for sure worth a try. If you’re in the sub very much you know that people rarely agree on one thing and this is one of them :)

Actually, I'm with you. It's not just that they're greasy, and too thick, they get stale very, very quickly. Also, the red salsa is almost always bubbly, sour, and starting to ferment.

So sour! That red salsa has totally ruined a burrito for me because all you taste is the sourness. I’m glad I’ve discovered the green smoky sauce as an alternative, but still would love a better quality red sauce.

I think it's probably poor kitchen protocols; they might be mixing old and new salsa, especially dumping new salsa on top of old salsa...

Is it better than chipotle? Yes. Is it better than your standard taco truck? No.

Weird take on this thread where we’re talking about chips because 1) Chipotle’s chips are fire and 2) Taco trucks usually don’t have great chips

Oddly enough Chipotle crushes it on the chips front. That tiny hint of lime mixed with salt, plus the texture. Shame they couldn’t come up with an edible queso to pair them with.

That’s IF the Chipotle puts salt and lime on the chips. More often than not I get the chips and there’s literally nothing on them. 😒

EDIT: my bad. Of course they do. We get catered from them often enough and I make my own nachos. I was thinking they offered bags of chips.
