NADC was overpriced and overrated. $17 for a small double burger!?!

$17 for a smash burger? With thousand island dressing? Why the hype because it says "Wagyu" in the food description? Genuinely shocked that people line up down the street for this nonsense. Fries were $5 and ok.

Especially in anything made with ground meat. The point of wagyu is the marbling of the fat content in a steak cut. If you are grinding it up you can control the fat content and ratios by introducing different pieces of meat. It’s entirely meaningless in a burger.

Wagyu is breed of cow. Nothing more. You’re not getting graded Wagyu in a burger - which is its own thing and what everyone (including you) seems to think. You can have 93/7 ground Wagyu. You could have 10/90 Wagyu. It’s a breed.

And I’m not defending NADC. I’ve never had it. But this is a food sub and people should know some basics beforehand.

Right but what he's saying is the entire appeal of the Wagyu breed is the higher level of marbling in its steak cuts.  If I grind up wagyu steaks for burger patties, I'll get a certain fat content.  That fat content is easily replicated with cheaper cuts b6 controlling the ratio. There's absolutely nothing special about ground wagyu bc you've stripped away what the appeal is

Taste is a thing between breeds, too. It’s why some people prefer the flavor of grass fed over grain fed. Or grass fed and grain finished. These all have different flavors. It’s not just fat for fat sake.

Well it’s smashed flat on a hot cook top until it’s crispy. Very few people have a delicate enough palette to tell you if a smash burger was made with wagyu or from a cow that never left a box and ate grain.

In Japan, wagyu is a term referring four specific Japanese cattle breeds raised under regulated conditions. These breeds were created by crossing native Japanese breeds with foreign breeds. And even cattle crossbred with other varieties can still be called wagyu if it meets the criteria, particularly in the states.

There is also 'native wagyu' which refers to two other breeds that are native to Japan and haven't been crossbred with Non-Native breeds.

Wagyu isn't necessary raised differently. Its just a breed of Japanese cow.

Kobe is the wagyu that is raised super nice and premium.

All Kobe is Wagyu but not all Wagyu is Kobe. (Especially now that American/Australian wagyu exists)

There are several different regional varieties of wagyu in Japan. Kobe is just one of them and has the largest International marketing exposure.

For instance, in Takayama, Gifu Prefecture, you can buy Hida-gyu 'Hida beef', which has separate regulations and is marketed as superior to Hida wagyu much like Kobe is a branded version of high quality wagyu from Hyogo.

I see A5 graded Japanese Wagyu in the States that isn't Kobe. But Kobe is definitely the most ubiquitous of the branded Japanese Wagyu in the US.

If you go back to Japan, definitely try the Hida Beef. We found it generally less expensive than the more tourist oriented Kobe labeling for the same grade and I preferred the flavor.

The weak Yen for the last couple years made it a very good time to sample some high quality meats and seafood in Japan.

Wagyu isn't a breed of cow. It's a reference to four different Japanese breeds which must be raised, in Japan anyway, under specific conditions with this intent to increase the marbling and fat content. Even meat from cattle belonging to those four breeds are not called wagyu unless they are raised in compliance with those regulations.

While there is some difference in taste and texture between different breeds, there's a much greater difference based upon how they are fed and raised, which is why there are strict rules on breeding, feeding and processing of wagyu beef in Japan.

But the defining characteristic of wagyu beef is the texture and heavy marbling in the major cuts, which is totally irrelevant when they're grinding the low value cuts with fat to make hamburger.

Ground wagyu beef, especially in America, is a scam.

Wagyu is a catch all for four breeds of cow. All various labels of Wagyu. It is a breed.

And the marbling is in no way connected to labeling it Wagyu or not. I’m in no way saying that’s the end of story but the simple fact is, regardless of how it is raised, Wagyu is a legal definition of breed and breed alone. As outlined by the USDA themselves.

You can’t raise an angus steer like a certified Wagyu cow in Japan and suddenly it becomes Wagyu. Because Wagyu IS A BREED classification.

Wagyu isn't a breed. A breed is a particular strain of cattle. Wagyu beef is meat from a set of breeds raised under regulated conditions whose intent is to produce a particular marbling and texture in the meat. It is effectively a national marketing campaign in Japan.

If you're going to correct people on a public forum, then at least educate yourself a little bit.

Even your own reference doesn't claim that wagyu is a breed. It claims that it is a collection of breeds.

But in Japan, just having a cow from that stock is not sufficient to label its meat as wagyu.

Also, "Texas Wagyu" is usually what you're getting. It's a hybrid of Black Angus and Japanese wagyu. There are like 4 breeds of Japanese Wagyu and none do great in most US cattle regions, hence the hybrid.

I think that’s maybe an appropriate comment for r/cooking. I would argue this food sub isn’t about cooking and isn’t necessarily people who are super knowledgeable in that realm. Yea there probably are a good amount of people who know their way around a kitchen and cooking is a hobby. But probably a lot more like to go out to eat as a hobby, and “trying new restaurants” does not equal “I know how to cook” or “I’m super knowledgeable about food ingredients and how it’s made” etc. How many times have I seen a request and the response is “that’s so easy to make, just make it yourself!”. Nah.

It's actually a little more complicated than that.

Those are the rules to participate in the American Wagyu Associations AMS program. But the term wagyu by itself is not trademarked and meat can be labeled as wagyu without meeting their certification. But what you said is generally true if it has a USDA certified wagyu label.

The American wagyu sold at Costco is usually about a 50/50 cross of a wagyu hybrid with an Angus.

It's a weirdo celebrity-founded burger place that hasn't had a single good review here. It stays open based on two constant revenue streams:

  1. Tourists who use Instagram to tell them where to go and recommend it to friends since it's popular
  2. Locals who use Instagram to tell them where to go and only come to Reddit after having a bad experience

If it were just a local joint or it didn't have the story "backed by professional skateboarder" it'd struggle a lot more. It's one of the establishments that's competing for the prize, "TxTAG of Austin Food".

Instagram itself is jammed with people praising it because it's a circlejerk of people competing for attention.

I'm pretty sure I can name 6-7 burgers ahead of it on my Austin list at this point. Casino, Jewboy, Buddy, Dan's, Sour Duck (who's smash I enjoyed immensely more than NADC's), Billy's.

I went at my GF's request a couple months ago, and she swore off of it after eating it. She felt extremely bloated and could not finish it bc it was too greasy. I thought it was pretty solid, wouldn't complain except for the price point, but I also can live without it so that was likely the last time I'll be there.

I'd hardly call Jewboy "washed up." Service at Jewboy is good, the burger is solid, they have unique offerings for burgers around here, and the feel is old Austin.

The offshoots are generally OK, but the main burger place is still good.

Is it the best in Austin? No - places like Casino exist, and when you get a good burger there, it SLAPS. Is it someone talking about how "good" the burger at Devil May Care? Also no.

Not only that, but 99% of the people saying "you should eat at Casino El Camino" moved to Austin within the past 5 years. I'm literally talking to people who are in the "I just moved here where should I eat?" and are gushing about it.

Is it a little overhyped? Sure. That's Austin - everything good has to be "amazing!" and not just "good." Casino IMO is the best burger in Austin, but Austin isn't a burger town - it's no 58 Club/Matt's or that place in New Mexico that does the GOATed Green Chili Cheeseburger, but it's still really good.

But acting like it's "gross" is a horrible take and basically betrays the fact that the person saying it can't stand anything that isn't sterile canned steel and glass bullshit.

I've only been here for 15 years (my first summer here was when the Austonian opened.)

I should also note that the "mostly new people pushing Casino" is less "only newbies to the city like it" and more "a huge amount of people in Austin just moved here recently." The people who I know who have been here forever love it just as much.

I love Matt's too. But my first time there was last summer. It was one of those "I'm a local but I've never actually done that somehow" things for me.

I don’t think I’ve noticed a shout out to one of the old original hamburger joints in Austin —Dirty Martin’s Place [Kumback] (2808 Guadalupe). Their two Patty OT special sells for $9.77 and is a true delight! Once I tried vegetarianism and made it about 28 days and then one of my roommates saw my car parked at Dirty Martin’s and he knew I wasn’t there for the french fries. I’ve been going and loving that place for years.

Not sure what they paid Joe “small stature shit comedian “czar” of Austin” Rogan but it still paying off. Not worth it. Wagyu namesake and lore bastardized into merica stuff. It was sliced on rice or alone as a small part of a meal.

Smash burgers at any restaurant are typically a ripoff. If I'm paying more than $10 for a burger I want some girth. At least give me the beef I'm being charged for.

Hubby and I tried one at an F1 event and we thought they were delicious. Those were free though. $17 is crazy!

Oh god it's the worst. I tried it earlier this year, SUPER expensive and the burger was a flat, greasy patty and honestly just wasn't good. I do NOT get the hype with this place. To me, a "burger" is not a gourmet food and never will be. I'd take P. Terrys or Whataburger over any of these fancy burger places any day. El Camino if I'm downtown. Or if I'm feeling like a different sort of burger, Jewboy is the way to go 100%.

Yeah its good burger, but its not better than any other smash burger in this city. They all taste the same for the most. The goods ones are all good. I can get a wagyu smash burger from Sour duck for $6 on happy hour

Yeah, I had their burger once. While it wasn't bad, it wasn't particularly good either. Definitely overpriced. As a matter of fact, it was the most expensive burger I've ever had considering I also got a parking ticket.

THANK YOU people get all up in arms and look at me like I have two heads when I say I think it’s overrated. They definitely got their marketing down and I give them props for that at least, but it’s just another social media hyped up place. Not awful, but not worth it.

Patty palace, biggies yardbird, casino el Camino, golden tiger, jewboy, bb’s, two hands, bubs, and the truck at nickel city are FAR better.

I thought it was a good burger but not worth $17 bucks. There are better alternatives at a lower cost. Couldn't taste the difference between wagyu beef and regular ground beef from other burger joints

Tastes like they put soup mix or something on it for seasoning. Not the worst but they charge a lot for mostly store bought ingredients. The jalapeños are actually a nice touch though.
