Chuck roast, onion and garlic, cumin and Mexican oregano, suet. Chuck roast browned in bacon drippings. Various chiles.

Do you steep chili’s in water and then blend into a puree? I bet this is incredible with how simple and bold the flavors are

Yes soak in hot water for an hour or so. Then purée. I make chili various ways but the simplest recipes are my favorite.

Which chiles? From the picture it looks like you’re using some Guajillos, a couple Pasillas, some Puyas, and a couple chipotles. Am I right?

Close! Pujas on the right. Chipotles in the middle. California on the left. I use different chiles depending on what I have or feel like. I think using three or four different kinds helps the flavor.

I’ve never used sure in mine; something new to try! My partner thought she hated chili here whole life until I made her this style (not going to say “real” or anything like that because everyone’s got their own way) and now she loves it. Looks great!

How long did you let it simmer? I made chili with a chuck roast once and I couldn’t get the meat to be tender.

About two or three hours at very low heat. Barely simmering. I often put it in the fridge overnight also.
