Try Jasmine, Bomba, or Arborio

Short grain types like Arborio or sushi rice should work. They’re short grain and starchy which is good for rice pudding

I use a short grain rice, but don't know if it really matters.

I'd use a risotto style rice if making from scratch and not just using left-over rice from another meal. Arborio or Carnaroli

I've always used regular long grain white rice for rice pudding. Turns out delicious & creamy every time.

Any particular brand?

Not really, we use the local grocery store brand usually. The brand names are so much more expensive for basically the same thing, white rice. Hope your rice pudding comes out amazing! It's something we enjoy when the weather is cooler.

Growing up it was only Carolina for rice pudding. For pilaf and stuffing things like veggies it was Uncle Ben’s. You need a starchy rice for pudding so it’ll bind properly and be thick. The recipe that’s closest to my grandmothers is for Greek rice pudding (lemonsandolives.com). Over the years with concerns about cholesterol I’ve successfully made it using 2% milk, no one was able to tell the difference

What rice was it?

What kind of Carolina rice were you using? Rice isn't a brand, rice is types of rice, just like how there are different kinds of apples, or potatoes, or any other plant.
