Fantastic looking. Well done. I’ve just finished getting burned out on muffins and have started biscuits but this would be the first choice if I had a brekky sandwich

Edit: meant to emphasize that the English muffins were also homemade too

What’s pepper Jack?

Better explained by Google than me lol:
Pepper Jack cheese is a semi-soft cheese, a variation of Monterey Jack cheese, that is infused with spicy peppers like jalapeños and red bell peppers, giving it a zesty flavor with a moderate level of heat. It has a delicate, buttery, and slightly tart taste, with a smooth, open texture that makes it versatile for dishes like quesadillas, sandwiches, and burgers, or as a standalone snack with crackers.

Oooh this looks great! Did you cook the eggs in a baking sheet?
