I love taking really cheap cuts of meat and making them into a memorable tasty dish.
I’ll post a separate comment with a slightly more detailed methodology but in short:
I heavily smoke a pile of super cheap lamb offcuts, then add them to cooked onions, parboiled basmati rice, Afghan inspired spices and stock, later adding carrots and close to the finish finally adding softened raisins.

Burger night! This week’s special was a Caesar burger. It included home ground center cut and blade chuck smash patties, Fontina cheese, my mustard pickles, and a mound of Caesar salad on a buttered and griddled homemade bun. Salad included lettuce, bacon crumbles, Parm Crisps, croutons, cherry tomatoes, and Caesar dressing.
