Bought this Yellow Cake for the first time this week. It is the best gluten free cake I have ever tasted. Checked the ingredients two times to be sure that it is gluten free. Tender, moist and flavorful.

Sprouts for the win

I recently became gluten sensitive (over the past year) and it’s been depressing discovering I can no longer eat things I’ve been eating my entire life. One of the things I’ve missed is baked goods and sweets.

My local stores where I normally do my grocery shopping have poor/small gf options so I decided to go out of my way to the closest Sprouts based on a post I saw on this sub (for a gf ice cream cone).

I came across this in there and legit almost cried lol. There’s also gf foods THROUGHOUT the store (cookie isle, cereal isle, bakery, displays throughout the store etc.) Not just one section.

I stocked up but had to run out of there before I spent all my money lol. 10/10 this will be a regular spot for when I need to stock up on gf junk food.

Recipe Homemade Gluten Free Orange Chicken Stir Fry

Ingredients -

Boneless skinless chicken thighs, cut into cube pieces

Kikkoman Orange Sauce (https://amzn.to/3JBSc73)

Kikkoman Gluten free soy sauce (https://amzn.to/4mZZ3Wu)

Salt / pepper

A few garlic cloves

Steps -

Add a few tablespoons of avocado oil to a hot skillet

Add salt & pepper to raw chicken and put into the skillet

Add garlic cloves and let chicken cook through (no raw sections left in the cubes)

Add two tablespoons of the orange sauce and mix / toss to coat all chicken pieces

Continue mixing and let sauce start to dry off and build almost a crust on chicken pieces

Add about four dashes of soy sauce and continue cooking

Add more orange sauce on top of everything, continue stirring until sauce is thicker but still somewhat runny

Pour over rice

Orange Stir Fry Chicken

This was a very easy recipe for me and the taste was really good.

Glutened myself in the dumbest way

Please commiserate with me lol. I was making dinner last night- microwave frozen rice and Dinosaur BBQ chili which are both safe. I do not yet have a gf kitchen though and my partner isn’t always the best about cleaning up crumbs. Whatever it’s usually not a problem. But last night my hand slipped and I got crumbs under one finger nail. One finger nail. I rinsed my hand thinking I wouldn’t be touching any of the food anyway. But rice is subject to the Dog Tax so I always save him some for when I’m done eating and I poured too much rice out and without thinking I scooped some up with my fingers and put it back for him. I woke up nauseous but just thought I was dehydrated or whatever. Nope. When I had to run to the bathroom I knew. But of course we’re supposed to go to a concert tonight so I’m trying to pull myself together enough. Luckily it wasn’t much so my symptoms are mild except the nausea 😫

Ingredients  1x2x3x

  • 2 Cups King Arthur Gluten- Free Measure for Measure Flour
  • 1-1/2 tsp Baking Soda
  • 2 tsp Himalayan Pink Salt
  • 1-1/4 Cup Softened Butter
  • ½ Cup Brown Sugar
  • 1 Cup Granulated White Sugar
  • 2 tsp Vanilla Extract
  • 2 tsp Maple Syrup
  • 2 Large Egg Yolks
  • 2 Tbsp Milk
  • 1-1/4 Cups Semi Sweet Chocolate Chips- ¼ Cup Separated
  • Flaky Sea Salt- I use Maldon

Get Recipe Ingredients

Instructions 

  • Preheat the oven to 350°F and line 2 baking sheets with parchment paper.
  • Melt your butter and let it cool.
  • While the butter is cooling, in a large mixing bowl, combine the gluten-free flour, baking soda, pink salt, brown sugar, and white sugar. Mix so the dry ingredients are uniform.
  • In a smaller bowl, combine the butter, milk, maple syrup, vanilla extract, and egg yolks. Mix the liquid ingredients, then pour it into the dry ingredients.
  • Using a whisk, mix just until everything is combined, then fold in the 1 Cup of Chocolate Chips.
  • Scoop out 2 Tbsp portions of cookie dough and place them with plenty of room in between. You should be able to bake 9 cookies maximum per baking sheet.
  • Check the progress of your cookies at 12 minutes to see if the edges are crisp, continue baking for up to 14 minutes if need be.
  • Remove the cookies from the oven, press in a few additional chocolate chips, for looks ,and sprinkle on some flaky sea salt. Then let the cookies cool for 5 minutes before transferring them to a cooling rack.
  • Eat and enjoy!

I think I'm having gluten reactions and I think it may be from the WalMart brand frozen hash brown patties??

I eat them several times a week and according to the label they're safe, but over the last week I've had so many GI episodes that are acting just like the ones I have when I've been exposed to gluten. Besides eggs, bacon, rice, and other things that we know don't have gluten in them, I think those are the only things I'm eating regularly. Does anybody else eat these? Have you noticed any reactions recently? I can't help but wonder if maybe they changed the formula but it hasn't changed on their packaging yet... Wouldn't they be required to update their label as soon as the formula changed?

I gave the Cappello’s pizza a shot and it was absolutely inedible. The crust has a really terrible taste that lingered for a while. Some of their other products are decent, but I would not buy this again.

We have gotten Beyond meat sausages in the past and those are GF. (FYI Impossible meat hot dogs DO have gluten. Some of their products are gluten free but not that one...)

But have folks found other safe brands or items that are tasty?

A small, local health store I visit frequently sent out a text that said they were offering a complimentary gluten-free product that day. I went in and told the owner I got the text, and he said I was the only one who came in that day so he gave me all this! It’s probably a $40 value with how expensive gluten-free stuff can be. I did buy some other things to support his small business but I thought this was so kind of him and lucky for me!

Question Packaged Asian Gluten Free Options?

Hi. I'm newly gluten free and I'll be the first to admit it. I'm lazy af and I hate cooking. Not to mention, my family kinda sucks when it comes to cross contamination in the kitchen, so I try to avoid cooking as much as I can.

Does anyone have any asian gluten-free ready made food recommendations? (not talking about sauces, but actual food)

I've been experimenting [creme puffs]

I was curious, can someone make creme puffs gluten free? It's still in the experiment process. Texture is identical, but the flavor is off.

I was able to mimic the flavor by adding cream and sugar, but that batch didn't puff like this one.

No flour substitute was used besides potato flakes grinded down into powder; mimicking the look of traditional flour. Equal substitute of potato flakes to flour for the recipe. This is still a work in progress. I also want to try making this with gluten free flour and see how that turns out.

Feeling like my symptoms are taking over my life, need advice.

Hello, I started having symptoms of panic attacks and deliberating anxiety about 3 months ago. This is accompanied by diarrhea, upset stomach, nausea, and bad taste in my mouth, sometimes headaches as well. My first ever episode was really bad, i was in a constant state of fight or flight mode for about two weeks. After this I started to research and came across celiac and Non Celiac Intolerance and I decided why not because all of the symptoms matched to how i was feeling.

I want to add that whats frustrating about the situation is that I had no reason to be anxious or have panic attacks it was so random so my only thought was this is something related to my health. Reddit has many subs about anxiety and Gluten which is why I thought i finally found the answer and went gluten free about a month ago. Honestly I am feeling way better, I am starting to feel like my old self again. I did go to the doctor and my blood work for celiac came out negative and honestly I don’t want to do an endoscopy. As a new person going GF at times I do order from places that may use same fryers and I noticed that when I do I get anxiety days following the meal. This really assures me that maybe it is gluten but then I get discouraged by my family as they think it can be a panic or anxiety disorder.

I have started therapy to see if maybe that can help me along with my diet change. I just want to know if im really going crazy or if gluten can cause anxiety and panic attacks or is my family correct? Im just so confused and torn , I just want to feel better and be my old self again. How can I know for certain if I have a gluten intolerance? Thank you in advance for everyone who took time to read.
