Question How do i stop my GF bread from molding?

What am I doing wrong? If i keep it in the same packaging vs bagging individually, if I keep it on the top of the fridge vs in the cupboard, no matter what my GF bread keeps molding.

I’ve had a moldy bread issue before I was GF too. Am I doing something fundamentally wrong? Is it a temperature thing? Am I just not eating it fast enough? Loaf of bread never lasts more than a week without molding, I usually only eat 60-70% of the loaf before it molds, so I have to get a new loaf each weekend we grocery shop.

Any ideas?

Honestly, I keep my gf bread in the freezer and take it out as I need it because I don’t go through it fast enough.

Not op, but do you freeze it unopened in the original packaging? I'm new to gf bread & buns and just picked up a bunch of packages on sale that I won't be able to use up for a while.

If it’s unopened then it doesn’t NEED to go in the freezer or fridge but it doesn’t hurt! I usually will freeze it anyways simply because I am always low on pantry space

Someone already replied but yeah it usually goes straight into the freezer! I can usually break the individual slices apart when I need them haha and then I use a ziplock or similar after it’s opened.

I don’t really like gf bread not toasted so it just goes straight into the toaster from the freezer

I put parchment paper between pairs of slices. Then I put the package of bread inside a freezer ziplock bag. I reuse the bag every time I get a new loaf. The parchment paper makes it easier to separate the slices.

Freezer in the original packaging until i need a loaf, then in the fridge in a ziploc as I eat through it (keeps it just fresh enough to last through when I can finish it)

Slice before freezing. Same for cakes pies and lasagna.

I refrigerate first, then freeze. lets you peel the slices apart easier

I usually freeze it unopened in original package. For some breads this will result in the slices sticking together unless the entire loaf is defrosted but other breads I can simply pull out a single frozen slice and toast it a little longer. Or just store it in the refrigerator.

If it’s sealed like Schär and your house/apartment isn’t humid, you don’t have to put it in the freezer when it’s unopened. If it’s just in a loaf bag, I’d put it in the freezer after a few days even if it is unopened just because it doesn’t have an airtight seal.

I keep forgetting the rice is there. 🙂

But I read that brown rice could be kept in the freezer indefinitely, so I bought a 20 lb. bag of rice from Costco in 2020. It took five years to use it up and it stayed fresh. I just buy small bags now.

The week after I bought the 20# bag, Costco was selling 50# bags of brown rice. It was tempting.........

You can buy bags of frozen, precooked rice that you cook when you're ready for them. They come in steamable bags that are vented just for cooking in the microwave.

I buy 3 kinds: Trader Joe's, Aldi's, and the same kind that OP has (they all are varying sizes & textures so I like them for different things). I keep all 3 loaves in my fridge and the only one I've ever had mold is the one OP is talking about - so I think it's definitely more prone. But fridge or freezer is for sure necessary!

Curious on the different things you use the 3 versions for! We dont have a car at the moment so we’re stuck shopping at the same place. I have access to Udis bread but the size puts me off too much to get it, but it does taste top tier.

Has anyone made a GF bread tier list? Or GF any kind of food tier list? I would watch those videos nonstop…

The Trader Joe's bread is very small too. But the texture is so good, and it keeps forevvvvvver! I've had loaves of that like 3 months past their expiration date (in the fridge of course). I like it for my egg cup breakfast sandwiches - it's the perfect size for them. And because of its shelf life, I can just always count on it being good.

The Aldi bread is hands down the best I've ever found for sandwiches. It's almost full sized (go ahead and emit a shocked gasp, it's ok) so it makes a great lunch sammy. As with all gf bread, toasting it to just-before-toasted is necessary for good sandwich texture. It gets nice & soft that way. It also makes a fantastic grilled cheese.

And the bread from OP's post is a bit bigger than the Trader Joe's, but also softer and spongier, so it makes a great pb&j (again, lightly toasted first). I also like it the best for toast & jam with breakfast.

I'll add that I repackage mine - usually 2 slices (or 1 bun) per package - before placing in the freezer. Honestly I think freezing it helps with overall texture.

Been gluten free for so long honestly i much prefer the slight taste difference when you freeze it. Ive found peices in the deep depths or my freezer from several years ago and its still perfectly fine

Some of the GF hamburger buns I’ve frozen, when they thaw out, they get so mushy and nasty from the thawing process… Maybe I wasn’t using proper freezer bags? Not sure but that one time put me off towards freezing any breads, I don’t want them to be soggy when they come out!

Bring it home divide it into smaller packets, usually 4 per pack take out as needed.
