I've been experimenting [creme puffs]
I was curious, can someone make creme puffs gluten free? It's still in the experiment process. Texture is identical, but the flavor is off.
I was able to mimic the flavor by adding cream and sugar, but that batch didn't puff like this one.
No flour substitute was used besides potato flakes grinded down into powder; mimicking the look of traditional flour. Equal substitute of potato flakes to flour for the recipe. This is still a work in progress. I also want to try making this with gluten free flour and see how that turns out.

Cream puffs* My brother has celiacs so I'm trying to make recipes that mimic the originals texture, but make them gluten free.Ā
I also have a Strawberry Rhubarb pie crust recip, very delish. I'm trying to find the right flour substitute to use though. I've used Pillsbury and I find it grainy.Ā

Iāve used this cream puff recipe from King Arthur and they turned out really great

Iāve made them in the past just using a ānormalā recipe and substituting gluten free all purpose flour. Did you try that?
