I've been experimenting [creme puffs]

I was curious, can someone make creme puffs gluten free? It's still in the experiment process. Texture is identical, but the flavor is off.

I was able to mimic the flavor by adding cream and sugar, but that batch didn't puff like this one.

No flour substitute was used besides potato flakes grinded down into powder; mimicking the look of traditional flour. Equal substitute of potato flakes to flour for the recipe. This is still a work in progress. I also want to try making this with gluten free flour and see how that turns out.

I hate to dispute google but there are lots of GF cream puff recipes available. šŸ˜‚šŸ˜‚ I love all the recipes I’ve tried from the Gluten Free Austrian but there are many many other cream puff recipes if you want to compare ingredients and the process.

I realized my mistake. I didn't ask the question correctly. I asked Google Ai if there are any gluten free recipes for cream puffs using potato flakes as a flour substitute. [I wrote all this last night] my bad

I'm wondering if dehydrated potatoes could be formed into a gluten free flour substitute; making gluten free goods cheap to make and purchase.Ā  The goal is to create foods that feel and taste identical while also making them just as affordable as their gluten companions.Ā

Cream puffs* My brother has celiacs so I'm trying to make recipes that mimic the originals texture, but make them gluten free.Ā 

I also have a Strawberry Rhubarb pie crust recip, very delish. I'm trying to find the right flour substitute to use though. I've used Pillsbury and I find it grainy.Ā

I’ve made eclairs using gluten free flour and they were very good. I imagine it’s the same choux paste base?

I’ve made them in the past just using a ā€œnormalā€ recipe and substituting gluten free all purpose flour. Did you try that?
