Recipe Making GF bread at home help.

Made bread for the first time in like 20 years. Last time was with my grandmother and it had gluten. So I have no idea when it comes to GF baking. So this attempt was full of errors I’m sure. If you all could provide some feedback back and tricks I’d appropriate the advice.

I was given GF sourdough starter about a week ago. I kept it in the fridge and fed it the day I used it. I let it sit out after feeding for around 4 hours. I used the recipe in the pictures to make bread in my bread maker with the GF setting. I added Fleischmann’s bread machine yeast and Bob’s Red Mill GF 1to1 baking flour. I think it is under done and didn’t rise enough. Maybe’s too much Xanthan gum, because the flour had it in it already and I added more? It taste better than what I get at a store, so that’s a win. But the texture is off and not consistent.

Thank you for the advice.

Cookware

I know this isn't exactly a dedicated gluten free question. I'm looking for new stainless steel cookware. I have a gas stove. What's the best brand? Does it matter? Any recommendations?

Question Gluten Free Hard Candy recommendations?

My mom was recently diagnosed with Celiac and is really missing hard candies and mints. I've been wheat/gluten free for a decade, but I've never really looked into that kind of candy.

Anyone have any recommendations for Celiac-safe hard candy? She's also allergic to carrots, so we've got to look out for carrot juice as a natural dye source as well.

Thanks for any help!

Editing to say I'm U.S. based since I know that makes a difference.

Hi. New to Gluten Free eating. Supporting my daughter who had to go Gluten Free for health reasons. We bought some of the King Arthur Gluten Free items. More specifically the pancake mix, brownie mix, scone mix and measure for measure flour. Does anybody have any suggestions/ recommendations/ helpful hints on using these products?

Question Have any of you had your legs go numb (neuropathy or similar) from eating gluten?

I always go back n forth with gluten, knowing it doesn't make me feel great despite loving foods with it like croissants or pasta or whatever... I like making great dishes and don't go for gluten free options

Anyways, I've never been tested but booking one now for Tuesday hopefully for "Anti-transglutaminasa tisular IgA (tTG-IgA)" as I've been eating a lot of it recently.

I noticed after not eating it for a bit, and going full on in pasta mode and a bagel. I would wake up with my right leg SO numb. Scarily numb. I couldn't think of what it could be as I'd say I'm a healthy active young man all around but the only thing was I've been indulging in gluten foods.

It made me google and seeing things about neuropathy and so on.

Wondering if anyone else here experienced this and figured out it's because they are celiac / can't eat gluten / did you get any tests?

Also regarding my Anti-transglutaminasa tisular IgA (tTG-IgA) test - if there's anything else I should be asking for?

GF options in Belfast

Hi! I am a gluten-free student from Barcelona, and I will be studying abroad in Belfast next semester. At home I am used to having plenty of options and I am quite anxious about not having suitable options over there, so I would really appreciate any recommendations you might have, such as restaurants or gluten-free products available in supermarkets. Thank you.

Sweet win :)

Just wanted to share a sweet thing that happened to me with people who will understand just how much this means.

Today was my dear friends birthday party, a cute little picnic in a rose garden. She had brought a slice of gluten free cake for me that she had found at the farmers market earlier today to her own birthday party so that I wouldn’t be left out when everyone was eating cake. 😭

No one’s ever done that for me before. Keep your thoughtful friends close! Feeling so loved :)

These are so good! If you ever ate the Reese's Sticks, these are similar enough. Could use a little more peanut butter in my opinion but I'm not complaining.

Trader Joe's GF Pizza with extra mozzarella. I added Penzeys pizza spice, Trader Joe's mushroom seasoning, red pepper flakes, and on my side, I added pickled peppers. It was quite good.

I was gifted these Dollar Tree air dry clay coffins. I went to read the ingredients and lo, wheat is at least labelled so I didn't end up in anaphylaxis with a secondary Celiac reaction.

The cute clay coffins are not safe for people with a need to avoid wheat.

OMG!! Maybe i’m late to the game but I had to post about these. Just tried the waffles for the first time ever and I want to cry from happiness. I grew up eating eggo freezer waffles everyday before school. I haven’t been able to have a good old fashioned frozen waffle in over a decade. I am blown out of the water. THEYRE DELICIOUS!!!

GF Pizza crusts

So for the Marguerite pizza I used St Loren’s gluten free crust. It’s rolled up in wax paper (1 crust) for 8.99. I didn’t stretch it or change it. I pre baked it. Added my toppings. Baked 6/7 mins more. It was absolute perfection. The perfect thin crispy crust.

Tonight I tried Schar crust. No pre bake. It was really good. A flat bread type consistency. Hawaiian style. Both topped with fresh basil. These are 2 for $10.99.

I definitely prefer the thin crust but the Schar is good.

I do not have luck with pre-made up frozen pizzas for some reason. The ones with toppings already added.

I will say the gf crust mix I found at Scheels has been my favorite crust ever. You do have to make it and roll it out but it’s makes two for $8

What's something you DO NOT miss?

A recent post about gluten-free hamburger helper from Walmart made me realize that that is one of those things that I definitely don't miss eating since being diagnosed with celiac disease in 2018. It never would occur to me to seek out a gluten-free version of that. Don't get me wrong. I know some people like it. I just have so many memories of any of it growing up poor... 😂

But it got me wondering: what are some things that you guys do not miss about eating gluten? It could be a food or maybe an experience...

(I also don't miss eating twizzlers. They always seemed to end up getting stuck in my teeth.)

Discussion Glutened but GLP1 slowed reaction

This is pretty silly and I didn’t think the GLP1 sub would appreciate it.

I was accidentally glutened at a party by a friend who swore all the seasonings were gf. He was spraying it with beer and water while smoking the meat.
I have gluten intolerance and typically have a reaction needing extended bathroom use within one hour of consumption.
Since the GLP-1 has slowed my digestive tract down so much, I made it about 3 hours and home to my own porcelain before the reaction hit.
Calling it a win 🏆

Please could you help me understand US food labelling so I can keel my coeliac 6yo safe when visiting WDW from England.

I know DisneyWorld is very good for coeliacs and I’m confident navigating that on Disney property. However, we’d like to go to a supermarket and get some snacks and breakfast items for our son.

Over in the UK any food with the words “gluten free” on the packaging must contain less than 20ppm. It is my understanding that in the USA manufacturers can whack the words “gluten free” on anything and literally nobody checks or cares if it’s true…? Or have I got that wrong? 😂

How do I know what’s safe, and what items are a “may contain” risk (which I will want to avoid)?

I tried looking at cereals online just to investigate and they all contained oats? None stated “gluten FREE oats”, just oats. So I’ve got stuck at the first hurdle!

Any advice/guidance would be appreciated! Thank you
