In addition to learning and drilling technical escapes, wrap your mind around a couple key points:
Escaping is offensive, not defensive. You aren't seeking to "get away" from your opponent but rather to assert control. The term escaping leads many people to think purely in terms of running from a bad situation instead of attacking their way out.
You don't need to escape all at once. Make small trades to improve your position and weaken theirs. Don't wait for the golden opportunity to break free. Create lots of smaller openings to break down their posture, tie up their mobility, and work your way to taking control from the bottom to support your transition.
In Kami Shiho Gatame, they have strong control of your shoulders, and probably chest, but no control over your legs and hips. You can generate a lot of power still. Use this to force them to adjust to you. As you get better at predicting those adjustments, you can start to anticipate their reactions and start laying traps.

The Kodokan has videos on escapes. Here is one for tate-shiho-gatame.

Don't take this the wrong way, but that is an extremely questionable defence. Not only is it very unlikely to work on anyone except a raw beginner, but even if it does work you're now stuck in a strong strangle finishing position.

Great point. This may or may not stop the osaekomi clock (not sure), but you’re still stuck in the same terrible position.

As I understand it the hold is broken but the ref shouldn't call mate till the submission is escaped.

John Danahers "Go further faster - pin and turtle escapes", or for a less wordy/more concise instructional look at Lachlan Giles submeta. I think the basic escapes might even be part of the free section of submeta so maybe try that first.
