Recipe Eggplant & White Bean Meatballs with Fresh Tomato Sauce
I got an eggplant, basil and a boatload of tomatoes in this week’s farm share. I’ve got seven eggplant meatball recipes in my app but most of them have a ton of bread crumbs but this one from Food Network stood out because it has white beans and only uses 1 cup of whole wheat panko. A lot of veggie meatballs can be kind of mushy but I thought the beans added a nice texture so these were on the firmer side. The tomato sauce had a nice fresh, unfussy flavor and I’ll be making more to freeze. Big salad on the side, as always.

Any idea if they freeze well?

Have no idea. Unless I’m making a really big batch of something, I eat the leftovers the following day. I guess you could try freezing one as a test.

Oh my goodness, that looks amazing! I'm definitely making this! Always looking for ways to disguise beans for my husband 😉
