Have been researching and am very interested in becoming…feel like the current recommendations for a diabetic diet (high protein, high fat, low carb) isn’t the right way and will just keep me on my meds.

Grains, bread (and Judaism)

My wife and I are observant Jews. According to Judaism bread is considered so only if it's made of wheat, barley, oat, rye or spelt flour.

Been making oat bread for a while since my wife had/has helicobacter pylori and her homeopath said she should avoid gluten (she hasn't been so strict about it lately so gluten content shouldn't be an issue now). I was also under the impression that oats are the healthiest amongst the grains mentioned above.

We started eating WFPB a few months ago and I'm not sure it's possible to make oat bread that is WFPB. Technically, we need to eat bread from one of the grains mentioned above only on weekends, but during the week we can eat bread made from anything.

(We don't especially like spelt)

My questions are: 1. Which of these 5 grains would be the healthiest to make bread out of?

  1. Would the answer to 1 be the best option for weekdays as well or are there other grains/pseudo grains that I can make healthier bread from?

  2. Should I worry about diversity if we eat bread made from the same grain every weekend? Every day?

  3. I would love to get some recipes. mind you I don't live in the USA.

Sorrel

Hi all, I balanced my farmer’s market sorrel to extract the oxalic acid and it all turned brown! Any idea why? Perhaps that’s what caused it to turn brown? I had heard that it has a lot of it and that accounts for the sour taste. Maybe it would have been better to just eat it raw.

Is unlimited greens really good for us?

Ignoring the high amount of oxalates in certain vegetables, would drinking like a gallon or more (or at least a large quantity that wouldn’t over hydrate you) of cold pressed dark leafy greens or bitter plants straight from a masticator throughout the day as a primary source of hydration along with eating healthy food be the ultimate healthiest thing you could do?

INGREDIENTS (serves 4).

120g / ½ cup fine bulgur wheat (soaked).
3x / 250g large fresh tomatoes (roughly chopped).
200g / ½ tin chopped tomatoes.
2x large fresh red peppers.
1x red onion (roughly chopped).
20g / ½ cup fresh parsley (chopped).
10g / ¼ cup fresh mint leaves (chopped). 2 tbsp / 20ml / ¼ cup lemon juice.
2 cloves fresh garlic (crushed).
1 tsp aleppo chilli flakes.
1 tsp ground cinnamon.
1 tsp ground all spice.
1 tsp paprika.
seasoning - pepper.

GARNISH

25g / ½ cup cucumber (chopped). 1x spring onion (finely chopped). fresh parsley.

INSTRUCTIONS/ METHOD (10 mins)

  1. Place bulgur wheat in a side bowl & pour over boiling water, covering maximum of 1cm & leave to one side to absorb.
  2. Roughly prepare your veg by chopping up & removing seeds.
  3. Place all ingredients in food processor & blend to preferred consistency.
  4. Chop up all your garnishes & place in side bowls.
  5. Ladle soup into bowl, garnish & then serve.

I want to be plantbased but Digestion makes it hard

Hey everyone I really want to be a full plant based eater But I have troubles with my digestion.

I’m a runner and cyclist who trains a lot. Between 10-18hrs per week with gym training.

So I need a lot of kcal and I have a big stomach and generally have a good appetite. Recently I love to prep my meals. I don’t miss anything and love the taste of my oatmeal and banana breads, fruits, lots of veggies and fermented foods. Pots with lentils, peas, veggies potatoes and herbs. Protein powder from esn.

Some days I’m bloated a lot but feeling good and have power in training. But my belly makes it difficult with running. I have to take care a lot what and when I’m eating before workouts.

Still trying to find the balance here.

How do you handled and maybe do you have some tips for me ?

Even as a normal eater I was eating very high amounts of protein and fiber since 10-20 years. So i think I’m used to it. Maybe it’s more the amount of starches and fiber which makes it harder for me.

Most of the days I have between 3500-4500kcals to handle my training.

I’m at the toilet 2-4 times a day

I don’t consume many processed vegan foods. Minimal soy milk for coffee. Some vegan yogurts. No breads

Mostly oats rice potatoes Fruits and veggies Nuts and seeds Lentils beans peas Protein powder Tempeh

courgette flowers stuffed with seitan!

Recipe:

  1. For the filling, I minced some seitan and added salt, chopped rosemary, garlic powder, grated vegan parmesan, bread previously soaked in water and pepper.
  2. After mixing everything well, I stuffed the zucchini flowers.

  3. I cooked them in an air fryer at 200°C (400°F) for 15 minutes.

Awful bloating and digestive issues

Hiya! I've been a vegetarian my whole life but recently made the switch to veganism. I'm consuming the same foods I've always had, but cut out dairy. However, I'm extremely bloated. I don't eat raw vegetables at all. Fruit in moderation. And I drink soy and oat based milk for my teas and coffees, which is a new transition. I also just moved countries, so maybe it's that?

Are hazelnuts supposed to taste more bitter than almonds?

So a couple of months ago I created my own pudding recipe with unsweetened almond and peanut butter. As a sweetener I use dates.

A week ago I bought some hazelnut butter to add a different flavour to it and for a better omega3 to omega6 balance. But to my surprise it basically almost only added some bitterness.

Are hazelnuts more bitter than almonds? Or do I just need to get used to that kind of "bitterness" from them. I dont really wanna add more dates.

Can anyone recommend a yeast & cashew free mac & cheese recipe?

Does anybody have a recommendation for a Mac and cheese recipe that doesn’t include yeast or cashews?

I have an autoimmune disease (ankylosing spondylitis) and a big food trigger for me is yeast and mold. Cashew & nooch based mac and cheese were my all time favourite comfort meal and I’m so sad that it causes inflammation for me.

Does anyone have a creamy, fatty recipe that still has umami depth to it and not just boiled carrots?

I do online grocery shopping now.

Too much potassium?

Im 78 and have been vegetarian for over 30 years. Very healthy, take no medication . Recently my blood shows slightly high potassium. Apparently, this could affect my heart. My kidneys are good, I don't have any other issues.
Has anyone else had this problem from eating a vegetarian diet? I eat a lot of nuts which are high in potassium. I really dont want to go on a low potassium diet because it means giving up all the food I love. Suggestions?
