Recipe Indian-Style Stuffed Bell Peppers with Spiced Potato Filling

Post image

These stuffed bell peppers are a classic Indian comfort food. Soft green peppers are filled with a spiced potato mixture and cooked until tender with a charred top. They’re hearty, flavorful, and pair perfectly with roti, dal, or even plain rice.

Recipe: https://lentillovingfamily.com/stuffed-bell-peppers-with-indian-spices/

Ingredients

  • 8 small green bell peppers, tops sliced off, seeds removed
  • 3 tablespoons oil, divided
  • 3 medium potatoes, boiled, peeled, and mashed until smooth
  • 1 medium onion, finely chopped
  • 1 green chili, finely chopped
  • 1 teaspoon cumin seeds
  • 1 teaspoon ground coriander
  • ½ teaspoon turmeric powder
  • 1 teaspoon Kashmiri chili powder
  • ½ teaspoon garam masala
  • Salt to taste
  • 1 tablespoon lemon juice
  • 2 tablespoons fresh cilantro, chopped

Instructions

  1. Heat 1 tablespoon oil in a skillet over medium heat. Add cumin seeds and let them splutter.
  2. Add onion and sauté until golden brown. Stir in green chili, ground coriander, turmeric, chili powder, and garam masala. Cook for 30 seconds.
  3. Add mashed potatoes, salt, and mix well until the spices are evenly incorporated. Stir in cilantro and lemon juice. Remove from heat.
  4. Fill each bell pepper with the potato mixture, packing it down slightly.
  5. Heat the remaining 2 tablespoons of oil in the same skillet over medium-low heat. Arrange the peppers upright, cover with a lid, and cook for 12–15 minutes, turning them gently every 4–5 minutes so they cook evenly and develop char marks on the tops and sides.
  6. Once peppers are tender and slightly charred, garnish with extra cilantro and serve hot.

This recipe looks straightforward... the cooking method seems effective for getting that nice char on the peppers, which is key for flavor.

Thanks! Yes, the char is really what makes these peppers pop and without it they can taste flat. I usually roast them just long enough so the skin blisters but the pepper still holds its shape.

If I were to add some paneer for protein, would I have to cook it before hand to make it soft or can I just cut it up into smaller pieces and add it to the mix and it will turn out soft?

Paneer would be an amazing addition. It would make the filling more satisfying. Thanks for saving the recipe, I’d love to hear how it turns out if you try the paneer twist!

Thank you! I loved your website and downloaded the chickpea curry recipes (one with lentils and one with mango) too. I love Indian cuisine and will be trying all of these soon.

One of my favorite recipes that my mom would make for me when I was a kid. Thank you for the detailed recipe. One tip I have is to apply salt on the insides of the Bell Peppers. It makes them tastier.

I love that! Food memories from childhood always make a dish extra special. Thank you for sharing your tip about salting the inside of the peppers. I’ll definitely mention that as an option for readers. I’m so glad this recipe brought back those memories for you!

They look delish!! Thank you for the recipe - may I ask what protein pairs well?

Thank you! Glad you liked the look of them. For the stuffing itself, lentils, chickpeas, paneer, or even ground chicken/turkey work really well with the spices. If you’re thinking about sides, these peppers go great with a simple dal or grilled chicken for protein.

What about lamb? It seems to me it would pair well with lamb?
