So I have recently been trying to learn how to do this or just make a hot sauce from scratch. Can you offer any advice?

Use a scale to weigh your veggies so you can calculate the amount of salt around 3% of the veggies weight (I use sea salt). Use bottled water not tap. Make sure the veggies remained submerged and that no air gets in. This style jar has a water moat that keeps air out which I bought on Amazon.
