Howdy!
So for one reason or another, this sub had no mods and was put up for adoption. The new mod team is in place and more or less organized, and I wanted to just say "hi" and let y'all know what's up. Really, nothing much has changed other than the mod list! We've removed a few restrictions/rules, like the one about users with NSFW profiles (that rule is gone), and the filter about not mentioning people in title because we didn't understand why that was a thing (UPDATE: We have seen why this was a thing, and this rule is back in place). Also took out some filters about vegans because they were malfunctioning (the filters, not the vegans... though who knows?)
Anyway, so the real thing I wanted to mention is that we did update Rule 1 to require a photo of your steak when you post. Almost everyone does this anyway, but the few text only posts seem to mostly get little or no engagement, and we want to see STEAK. Lots and lots of steak! So please post your steak when you post, thank you. (UPDATE 7/24/25: After a six month trial of requiring photos in posts, we're going to start allowing text-only posts again. The rule has been updated accordingly... but we still love to see lots and lots of steak!)

[ NY Strip ] First time ever trying to cook a steak
New York strip( I think)
first time doing this and would appreciate for any future tips
I first patted it dry then seasoned both sides and the fatty side then let it cook in xtra olive oil for 5-7 minutes each side

[ Reverse Sear ] Wife said it was still moo-ing but I thought it was perfect!
Pulled at around 122. Let it rest for 5-10. Seared for 45 seconds or so each side. Threw some butter and garlic powder in. Topped with pepper at the end. Was perfect for me! Might have to let it hang in the oven a bit longer for the wife 😅

My first rib eye was glorious
Im one to eye-ball and not set timers, just cooking on gut feeling and my god im proud of my first rib eye!! Super tasty and cooked great! (Photo is a little washed out, it was very rare and hot pink!)

Process of reverse searing Grassfed Ribeye
Photos are: 1.) pre dry brine 2.) post dry brine 3.) pre sear 4.) finished
The greyband really infuriates me.
Ive tried it almost every way.
Straight from oven to pan Oven -> rest for 10 min to pan Oven -> rest for 20 min to pan Oven -> freezer for 5 min to pan
Super high heat flipping every 20 seconds Medium heat flipping every 45-60 seconds.
I just cant get away from it.
These turned out pretty good tho, just ignore the cheesy plating

Cooked steak for myself for the first time
I don't buy much meat. I've only ever grilled them before when my parents bought them, and never done it in a pan before. Seasoning was salt, pepper, and a little bit of rosemary, oregano and chili flakes. I had a taragon butter sauce that I used afterwards. Paired with corn on the cob.
[ Reverse Sear ] Cowboy ribeye
Dry brine about 6 hours with salt and pepper
Oven at 200 convection til 122F
Finish in cast iron with oil and butter, little bit of garlic
Serve with fingerling potatoes and broccolini
A little more grey band than I'd like but amazing nonetheless

Seared and air fried Tri-tip with mashed potato-polenta
I’m so happy with this. Never thought about cooking a tri-tip in an air-fryer, but it works!
