I was so focused on the uni (color & texture) that I didn't see the imitation crab sticks. I agree, those crab sticks don't belong on a chirashi (and also don't belong on a nigiri).

I’ve never seen that color on uni lol. Did you play around with the picture saturation? Shime Saba needs fresh grated ginger on top or at least some kizame wasabi or the very least some scallion. It’s very fishy to eat just like that plain. Kani cut like that needs to face the opposite direction and make a x and not face the same way.

I disagree about the saba. It's a beautiful tasting fish on its own. Strong, yes, but not something I want to hide beneath ginger or wasabi or even soy sauce.

Is that tilapia? Not a good fish to eat raw. Also as others mention uni looks rotten and fake crab takes away point. 3/10 cause salmon tuna and mackerel look edible at least.

I wouldn't eat anything that touches the uni, though. I thought it was Egg

There isn't a single piece of nigiri and I made a joke. People on reddit seriously struggle lol.

Incorrect. It is either Kaisen Don if it has unseasoned rice or chirashizushi (which is sushi) if it is seasoned.

Someone already pointed out that it’s chirashi, but it’s still not nigiri. It was tagged as nigiri.

Too thick cuts in my opinion. No picked ginger. Too much fish, not enough things to break it up.
Don't know what that white paste is? Pasted daikon?
Great presentation though.

There is a major lacking in finesse, technique, and presentation to the bowl. Whoever put it together has no clue what they are doing and if there was no oversight that allowed something like that to be served I would be suspect of the general handling of any of the food and its ingredients. Even if a rough handed amateur butchered all the ingredients because they were unskilled, a skilled chef could’ve still replate it in a way so it at least looked a little neater despite the poor cuts and handling.
Terrible knife work, even worse presentation and handling, uni and ebi looks completely unappetizing. 0/10 I would be afraid of getting sick and even if I didn’t I wouldn’t enjoy eating any of that. Were they short staffed and someone with no experience had to step in?

well sashimi is just cut fish, so the only thing that can be judged is the quality of the product which needs tasting

The imitation crab is a red flag, but honestly the uni doesn't look as bad as everyone says. It COULD be bad, but depending on the season or type of uni, sometimes it has a pale yellow color. I've seen a similar color both fresh out of the shell on the West Coast, and from restaurants in Hokkaido. There's a chance it might taste decent.
I've had the uni tasting course at Uni Murakami Hakodate and one of the species kind of looks like that (though less of the dark colored bits which probably aren't as fresh and might taste bitter)

Yeah. Thank you for the warm greetings everyone. but they’re not roasting me just my sushi. Didn’t know everyone’s standards are so high. This is actually okay sushi for our place not the super premium as everyone expects.
