That is what uni looks like a little while after being caught, when it hasn’t been treated with chemicals (usually aluminum chloride). I’ve had uni in this state a few times—it doesn’t taste quite as fresh, but it’s still good. uni is originally an ingredient that deteriorates very quickly, and even if it looks as though it’s melting, that doesn’t necessarily mean it’s spoiled.
