Local: (bottom right) Ahi tuna w/ soy sauce, sriracha, honey, macadamia nuts, sesame oil, white onion, green onion, Masago, furikake. Topped with togarishi, fried garlic, unagi sauce.
Main: (bottom left) Salmon w/ spicy mayo, sriracha, avocado, green onion, Masago, furikake, fried onions, fried garlic. Topped with togarishi, furikake, spicy mayo drizzle
Heights: (top center) Ahi tuna, Salmon w/ Masago, white onion, green onion, sunomono, Soy lemon garlic poke sauce, sesame oil. Topped with furikake and spicy mayo
All bowls come w/crab and wakame as sides.

So this sushi restaurant I went to as a kid had this one item I really liked. It went away after covid ended and I haven't been back since 2023 (I almost choked on 5 metal grill brush strands so I didnt go back. Also their pricing got a bit to outrageous when the family stopped running it solo). I was just wondering if the sushi enthusiasts could figure out what it was.
It was called sweet tofu and it was a very slim sheet of soft and sweet tofu on top of some rice. Artist rendition above. I mostly just want to know if it has an actual name because I can't find it when I search of sweet tofu. Honestly it might just be inari unfried with no seaweed.

Recreating the roll that got me hooked while showing a newly wed couple how to make their own sushi. Shrimp tempura, crab stick, cucumber & avocado inside + spicy tuna on top. Americanized? Yes. Lots of sauce? Yes. Delicious? Still yes.

This is the Snowy roll from Moritomos in Concord, New Hampshire, it's a flash fried outside and it's wonderful. The thing I'm trying to find out is what's in the sauce? if anyone has been here and has any ideas please let me know. I can tell that it has mayo, flying fish roe, Wasabi, and sesame seeds, but I can't quite recreate it with just those. sorry for the awful pictures.

I never see this on the menu anywhere. I can catch these pretty easily, and if I have a freezer that can get everything to the right temperatures for sushi, can it be used?
To be clear, even though "trout" is in the name, this is not a salmonid. It is a drum fish that is found in saltwater in the SE United States.
Just not sure why it isn't more common.
