I think the best ending of a game I've played is either portal 2 or la noire. I haven't played undertale though.

Best ending is doing genocide right before a pacifist

A small cutscene plays where Toriel enters the room and leaves a piece of butterscotch pie while you’re sleeping and when she leaves, Frisk turns into Chara and murdered everyone, shown by the end screen having Chara in the center and everyone else crossed out
