General Query Bretonnia, where to start …
Firstly thank you to everyone who gave me suggestions a couple of weeks or so ago, I went with Winds of Magic and Up in Arms suggestions.
I do now have another question, would Up in Arms be best to try and Homebrew a Bretonnian knight, or are they covered in any other books by chance?
Also, the Collector’s are really lovely!

Start by bombing fucking Stirland

That’s wholly uncalled for. What did the bombs ever do to deserve getting dropped on Stirland?

Definitely look at Knights of the Grail, the 2nd edition book on Bretonnia. (It's on DrivethruRPG if you can't find a physical copy second hand)
Also if I remember rightly, one of The Ratter fanzines (available free online) has rules for Bretonnians in 4e
